Week 19 - Delicata winter squash

We woke up to an unexpected frost this morning, which cut short the season of the rest of our summer crops. Say goodbye to cucumbers and zucchini! The season is starting to wind down, the flowers have come to an end and there are only 5 more weeks of CSA! Spend though your account now, it does not roll over into next season. However, not to worry if you don't quite spend it all before the end of October: we'll be having a bonus CSA day the Tuesday before Thanksgiving! That way you can use any remaining balance and have your Thanksgiving table stocked with lots of farm fresh veggies!

Veggie of the Week: Delicata Squash!



In honor of Squashtacular! we're counting down with some of our favorite winter squash recipes. This week is delicata, which I personally find to be the best because of it's delectable flavor and the fact that you can eat the skin! Delicata is amazing roasted, sauteed, in soups and in this recipe for Squash Egg in a Hole:

Ingredients:

about 1/2 delicata squash, cut into two thick slices

avocado oil, for brushing

2 eggs

herbs, for topping


Method:

Preheat oven to 400F

Brush squash rounds with oil and bake for 10-15 miunites.

Remove and lower the oven to 350F.

Crack an egg in each squash round, and bake for 12 more minutes.

Season and top with herbs of your choice.
