For our first week we're featuring our supremely tender mix of cute baby lettuces. This stuff is as fresh as you can get and is jam packed with nutrients to keep your body healthy. This tender mix of red and green baby lettuces is so tasty it can be eaten straight from the bag, dressed in a light coating of oil and vinegar or in this awesome recipe from La Crema for Baby Lettuce Salad with Strawberries and Goat Cheese:
Ingredients
8 cups mixed baby lettuce 1 cup strawberries, rinsed and hulled1/3 cup marcona almonds, roughly chopped4 ounces soft crumbled goat cheese¼ cup mint leaves, chopped2 tablespoons white balsamic vinegar1 tablespoon honey1 teaspoon Dijon mustard3 tablespoons extra-virgin olive oilsea salt and freshly ground pepper
Instructions
Wash and dry the lettuces, then tear into bite-sized pieces in a large bowl. Quarter the strawberries lengthwise, then add them to the bowl with the marcona almonds.In jar, combine vinegar, honey, Dijon, and olive oil. Shake to combine, then season with salt and pepper.Add just enough dressing to the salad to lightly coat the lettuce leaves. Toss gently, then top with goat cheese crumbles, mint, and a bit more sea salt.
